After all the fat was removed, I was left with a half of a brisket sandwich that wasn't even sliced correctly. Just stringy meat chunks. If this is what passes as texas bbq this place probably won't last. Grayson County is cursed with below average bbq I guess

Absolute worse BBQ ever so called sliced Brisket was more like chuck roast fat. and the Ribs omg don't worry about chewing on them you can't cut off a bite with a chain saw omg.
The meat was OK I got the $12 meal The meat had fat on it, And was the smallest meat plate I’ve ever seen in my life. I definitely would reconsider visiting this place after the size of meat that was on my plate. I took a picture y’all can look at the picture. The beans were over salted The potato salad was OK. The meat was gone within a couple of bites. I would definitely recommend going down the street to get a bigger portion for the price.
Before I retired, I took several clients on "The Tour" — I LOVE BBQ! Here is how I rate the food, service, and atmosphere: 1. Ribs = EASY 5-Stars, no joke, among the top three I've ever tasted, my wife was driving when I put a piece in her mouth — she almost drove off the road when she closed her eyes to say "mmmmm"! 2. Brisket = EAST 5-Stars, I asked for chopped with no fat removed, it was as good at home as right out of the booth 3. Pulled Pork = I'm from Texas, but spent much of my youth in Mississippi and Tennessee; in other words, I know pulled pork (e.g., Pappy John's in Selmer TN, now that's talking) — this ain't there yet, unless you are into sauce, and Clyde's is great scauce, but any connesuer of BBQ known sauce should always be an optional, not requirement — to Clyde's credit, he said he was still tweaking it — from what I know about his ribs and brisket, I have no doubt he'll get there in no time! The service was spot on, friendly and prompt, just like we expect here in God's Country! The atmosphere was great since we got to wait in our nice, air-conditioned truck while they slaved away in the food trailer. I've had more "flavorful" meat, Hutchins is a great example, their meat is some of the most flavorful I've found, but I feel sick 100% of the time I eat there, it's just that rich — so, I consider more than just the flavor; with additional flavor comes the side effects of too much smoke, and I can say that the ribs and brisket were smack in the perfect zone. I'd almost given up on finding decent BBQ in the entire Texoma area, but now I've got a BBQ home!
Brisket tacos are delish! You can actually taste the smoke unlike some brisket you find. Potato salad passed the test too (though I did add loads of pickles to mine). Will definitely be back!
The meat had flavor the large size was cute like the size of a 1.00 burger. the joke on me was the $12 price tag for a snack. Randys BBQ is down the road in Denison same flavor his regular was bigger and cheaper then this joke
I am a meat smoker myself, which doesn't to often but others smoked meat, and I don't mind critiquing, but Clyde's BBQ has some good brisket at a fair price with friendly staff. I will be revisiting again when I don't have the time to cook it myself. Good job Clyde's BBQ, well done! 👌
