Fatima’s Food Truck My visit to Fatima’s Food Truck in Zapata, Texas was a real treat! Formerly a brick-and-mortar location, they’ve successfully transitioned into a roving restaurant on wheels and are now serving customers in the parking lot of their new location at 308 US-83, which is set to open soon. This is a wonderful family-run business where the friendliness of the staff matches the quality of the food. The service is warm and welcoming, and the meals are consistently excellent — full of flavor and clearly made with care. I wish them all the success in the world as they continue this exciting new chapter.
