See All ReviewsGreat BBQ, get there right when they open. Take-away, not dine onsite. I am a BBQ addict. I have driven multiple hours, to wait in line multiple hours, for a plate of BBQ, just to drive right back. I have eaten at most of Texas Monthly's top 50, and have been making pilgrimages to BBQ spots all over Texas since around 2010. The crust and ring on the brisket was excellent. A generous rub that lets the tender beef flavor still take center stage. The sauce cooked down on the ribs was something special. A hint of sweet that complements the smokey. Any BBQ aficionado will tell you to show up right when a place opens to get the best product. There can be a narrow window when the food is safe for consumption and at the perfect texture. Even though I showed up two hours after opening, the brisket and ribs were both still 90% tender and juicy. That tells me right at opening it will be even better. There are some techniques for the hold, like full emersion in liquified beef tallow, that might help trap that last little bit of moisture, but everything comes with trade-offs. I'm in the area so I'll be coming back. My complements to the pit master. Cheers.
This place by far is the best barbecue I have had in a long time. Not to mention the green beans are amazing the macaroni cheese delicious and they’re Twinkies, which is HUGE jalapeños wrapped in bacon stuffed with cream cheese and brisket SMOKED on the pit is to die for. Lastly, the owners/staff are extremely nice and accommodating. West has been blessed with good people and incredible food. Worth every stop and every penny.
AMAZING Place + amazing people! The brisket bbq quesadillas were 20/10. Also the Texas twinkies !! The best quesadillas I’ve had near Waco, definitely a place to try!!
