Very authentic, exactly what I’d want from a taco truck

This is a simple taco truck behind a gas station, and the food is delicious. We got 3 quesabirria and 3 empanadas, things my elderly parents have never tried, and they loved them. They have outside seating under a tent, which is cute but not for me, personally, in the summer heat. I'll try that in the fall and winter. The employees were cheerful and friendly, and the food was made fresh to order. I'll definitely come back the next time I'm visiting Pcola.
