I tried The Collinsville Deli for the first time today, and I can honestly say it exceeded every expectation. Before I even walked through the door, Alexis, the owner, went above and beyond to help me over the phone. As a complete stranger and first time customer, she took the time to answer my questions and made me feel like I was already a valued regular. That level of customer service is rare these days and speaks volumes about the kind of business she's built. I work with business owners everyday. They're not all great. 😬 As for the food... absolutely phenomenal. Everything was fresh, made to order, and you can tell no shortcuts are taken. I ordered a sandwich, and it was the best sandwich I've had in years. The quality of the ingredients, the flavor, and the attention to detail were outstanding. Beyond sandwiches, they also offer burritos, burrito bowls, fresh smoothies, soups, and more. If the rest of the menu is anything like what I experienced, Collinsville is lucky to have this place and so am I. It's refreshing to find a local business that combines exceptional customer service with truly amazing food. The Collinsville Deli has earned a customer for life, and I can't wait to go back and try more of the menu. I'm pretty sure I'll make a weekly visit now. 😁 Highly recommend! 5 out of 5 stars! It was my first visit to the Collinsville deli. I was referred to this place by a friend who had previously eaten here with her motorcycle club. The people were great, they were enthusiastic and relevant. Our food was fast and fresh. Nice to see a new restaurant in town.
